I make this sweet potato so very often once autumn hits. It’s a magic trick: you’re burnt out, you’re not willing to spend more than five minutes in the kitchen, and yet you still get to eat something properly comforting.
Seasonal, healthy-ish, and ridiculously easy: a small miracle in a daily life that often needs one.
Veggie Loaded Sweet Potato – About the Dish
The loaded potato is usually America’s territory – a plain baked potato dressed up with cheese, bacon, sour cream and chives. This version drifts a long way from that diner blueprint.
Swap the bacon and sour cream for crumbled feta, a fistful of coriander, a good squeeze of lime and a spoonful of chili crisp, and you land somewhere between a Mexican elote and a Chinese pantry staple gone rogue. Chili crisp – that crunchy, deeply savory chili-in-oil condiment that’s found its way into basically every fridge over the last few years – is doing most of the heavy lifting here, alongside feta for salt and tang and coriander and lime for freshness. It’s not trying to be any one cuisine; it’s just what happens when you raid the fridge for whatever cuts through a mountain of sweet, starchy potato.
Veggie Loaded Sweet Potato – Recipe
Ingredients – Advice & where to find them
- Sweet potato: go for one large, wide sweet potato rather than a couple of small ones – more surface for toppings, and more fluffy flesh once roasted.
- Feta: go for a block of feta in brine, not the pre-crumbled kind – it’s saltier and holds its texture better once it hits the hot potato.
- Coriander: fresh only, and don’t be shy with it – it’s doing a lot of the freshness work here, playing off all that richness.
- Chili crisp: any jarred chili crisp or chili oil works, but ideally, go for one with plenty of crunchy bits (fried garlic, shallots, chili flakes) rather than a purely liquid one.
- Lime: fresh, not bottled – you want that sharp acidity to cut through the feta and the chili oil.
Cooking Tips
- Roast the sweet potato cut-side down – it steams gently against the tray while the edges caramelize, which is what makes the flesh fluffy instead of watery.
- Check doneness with a knife, not a timer – it should slide in with almost no resistance.
- Scrape, don’t mash – fluff the flesh lightly with a fork after flipping, just enough to rough it up without breaking through the skin.
- Push the two halves together before topping – it makes for a much more generous, “loaded” bite than two separate halves.
- Add the toppings right before eating, while the potato is still hot – that’s what softens the feta slightly and blooms the chili oil.
Five minutes of actual effort, for a genuinely comforting dinner. Dig in!
