One roasted sweet potato, a pile of paprika-crisped beef, and a cheddar sauce I could honestly drink by the spoon.   • Heavy cream: use the liquid, semi-thick kind, not the thick spoonable pot – it’s what keeps the sauce smooth and pourable.
  • Paprika: don’t skip it – it’s what gives the beef that faint smokiness that plays so well against the sweetness of the potato.
  • Jalapeños: optional but recommended, fresh or pickled – they’re there to cut through all that richness and add a crunchy texture. Pickled onions would also work well.

Cooking Tips

  • Roast the sweet potato cut-side down – it steams gently against the tray while the edges caramelize, which is what makes the flesh fluffy instead of watery.
  • Check doneness with a knife, not a timer – ovens vary, and you want it to slide in with almost no resistance.

  1. Roast the Sweet Potato

    Preheat the oven to 200°C (400°F) fan.

    Halve the sweet potato lengthwise, brush the cut side with olive oil and season with salt and pepper. Place cut-side down on a parchment-lined baking sheet and roast for 40 minutes.

    Flip the halves and lightly scrape the flesh with a fork to fluff it up, being careful not to break through the skin.

  2. Brown the Beef

    While the potato roasts, heat a skillet over high heat with 2 tsp neutral oil. Add the ground beef and spread it out slightly; let it sear for ~3 minutes without stirring, then break it into small pieces.

    Season with salt and paprika, and keep cooking for ~4 minutes, until well browned.

  3. Make the Cheddar Sauce

    Meanwhile, warm the crème fraîche in a small saucepan over low heat.

    Add the grated cheddar and stir a few seconds, then turn off the heat. Keep stirring until melted and smooth. 

  4. Assemble & Serve

    Split the roasted sweet potato open and fluff the flesh with a fork.

    Pile the crispy beef on top, pour over the warm cheddar sauce, and finish with a few slices of jalapeño if using.

    Serve immediately, while everything is still hot.
