There’s a modest little Chinese restaurant in Lille where I always order the same two things: dumplings, and tomato & egg stir-fry.

It’s the only place I’ve found that actually cooks this properly homestyle dish. It’s not sexy, it’s not meaty, but it’s become one of my all-time favorite comfort foods.

It’s one of those recipes where my other half walks in expecting nothing special, and ends up licking the plate clean. He genuinely raved about it for days after I first made it at home.

  • Salt: I find there’s no need for soy sauce here, but do as feels right for you!
  • White pepper: stick to white pepper rather than black, it’s what gives this dish its distinctly homestyle flavor.
  • Shaoxing wine: a Chinese cooking wine that adds depth, but you can skip it.
  • Cornstarch slurry: for a saucier version, bump the water up to 1/2 cup and double the cornstarch.

  • Sauce consistency: adjust the amount of cornstarch slurry to get the thickness you like, more liquid makes it easier to spoon over rice or noodles.
  • Bringing the eggs back in: fold them into the sauce only once the tomatoes have softened and thickened slightly, so the eggs stay tender rather than rubbery.
  • Finishing touch: turn off the heat before adding the scallions and sesame oil, so their flavor stays bright instead of cooking off.

  1. Beat the eggs

    Crack the eggs into a bowl and season with 1/4 teaspoon salt, 1/4 teaspoon white pepper, and 2 tablespoons of water. Beat well.

  2. Prep the vegetables

    Cut the tomatoes into small wedges and finely chop the green part of the scallions and garlic.

  3. Scramble the eggs

    Preheat the wok over medium-high heat until it just starts to smoke, then add 2 tablespoons of oil and immediately pour in the eggs.

    Once the bottom sets, use a spatula to let the runny parts flow to the hot surface, breaking the egg into small pieces. Transfer to a plate as soon as it's slightly underdone; don't overcook.

  4. Stir-fry the tomatoes

    Add 1 more tablespoon of oil to the wok over medium-high heat, add the garlic for about 20 seconds, then add the tomatoes.

  5. Build the sauce

    Stir-fry for 1 minute, then add the sugar, remaining salt, and a splash of Shaoxing wine. Stir-fry for another minute.

    Add the water mixed with cornstarch and stir. Cook for a few minutes, until the tomatoes are soft and the sauce thickens to your liking.

  6. Bring it together

    Add the cooked eggs back in along with the remaining white pepper. Mix everything together.

  7. Finish and serve

    Turn off the heat and stir in the scallions and sesame oil. Serve hot, straight from the wok, with steaming hot rice.
