- Cherry tomatoes: pick the ripest, sweetest ones you can find, since they’re served practically raw and undressed on top.
- Garlic: just one clove is enough – it stays completely raw in the blended cream, so a little goes a long way.
- Fresh basil: skip the dried stuff entirely here – it’s what keeps the sauce tasting fresh rather than just “green.”
- Lemon: you’ll need both the zest and the juice, so give it a good wash before zesting – it’s what stops the sauce from tasting flat.

Instructions
Cook the Pasta
Bring a large pot of salted water to the boil and cook the orecchiette according to the package instructions. Reserve a little pasta water before draining.
Cool the Pasta
Drain and let the pasta cool slightly, at room temp, for about 10 minutes.
Make the Sauce
In a blender, combine the ricotta, baby spinach, garlic, basil, lemon zest and juice, olive oil and reserved pasta water. Blend until completely smooth and pourable. Season with the salt and black pepper.
Prep the Toppings
Halve the cherry tomatoes and tear the smoked salmon into pieces.
Toss
Toss the pasta with the sauce right before serving - do this at the last minute so the ricotta cream stays smooth and the pasta doesn't soak it all up.
Finish & Serve
Plate the pasta and top with the halved cherry tomatoes and torn smoked salmon. Finish with a drizzle of extra virgin olive oil and serve right away.
