Winter Crudo is a refreshing, light meal with seasonal ingredients, that will make for a nice change to all the wintery soups and stews.
Juice your orange, lime, and add 1 tsp of bergamot juice.
Zest your lime seperately.
Add your olive oil, soy sauce, pepper. Set aside.
Rince your fish. Add your mixed salt & pepper to your fish and leave 10 minutes.
Rinse et cut your fish in thin slices.
Using a mandolin or a sharp knife, cut your radishes and put them in a bowl of iced water.
Cut your pomelo tops, then cut up pomelo segments (see video), that you will cut into smaller pieces.
To your serving dishes, add your sliced radishes, then your fish, your pomelo segments, your chervil, bergamot and pepper threads.
Pour your marinade on top.
Finally, add your lime zest.
Et voilà !! You're done !
