Roasted sweet potato halves piled with crumbled feta, plenty of fresh coriander, a squeeze of lime and a generous drizzle of chili crisp - a five-minute-effort, veggie-loaded dinner that still feels like a treat.
Preheat the oven to 200°C (400°F) fan. Halve the sweet potato lengthwise, brush the cut side with olive oil and season with salt and pepper.
Place the halves cut-side down on a parchment-lined baking sheet and roast for 40 minutes, until a knife slides in with almost no resistance.
Flip the halves and lightly scrape the flesh with a fork to fluff it up, being careful not to break through the skin.
Push the two potato halves close together. Crumble the feta on top, scatter over the coriander, squeeze over the lime juice, and finish with a generous drizzle of chili crisp.
