Raw ham & goat cheese wrap

Goat cheese and raw ham wrap cut in bite sized pieces
Be it for entertaining or for a quick lunch, wraps are a life savior. Those sweet and savoury wrap bites are quite Frenchy. I chose to mix some raw ham with two goat cheeses ; a fresh one as a spread for the wrap, and a slighty matured one for the stronger taste and creamy texture it brings. The onion confit is really important here to offset the lactic acidity from the cheese, and it pairs wonderfully with the raw ham. Add a bit of freshness with arugula and chives, and a touch of crunch using nuts (hazelnuts, or walnuts) : there you have it, a quite fancy little bite, ready within 30 minutes. You simply launch your onion confit first, as it takes some time to melt, then chop off a few ingredients ; fill and roll the wraps then, and you’re done !

  • Goat cheese : It's ok if you use supermarket goat cheese for this recipe, as we don't want too strong a flavour from it.
  • Tortilla wraps : Don't forget to heat them up slightly before using, or the wrap won't fold nicely !

Description

A balanced, sweet and savoury wrap with raw ham, goat cheese and onion confit as main stars. Add some greens for freshness and nuts for crunch ; you're done ! 

Ingredients
  • 8 raw ham slices (thin and large)
  • 1 goat cheese log
  • 4 tablespoons fresh goat cheese
  • 2 large tortilla wraps (~25cm)
  • 1 onion (large)
  • 2 tablespoons honey
  • 4 handfuls arugula
  • 1 chives bunch
  • 12-15 hazelnuts (or 10 walnuts)
  • 1 teaspoon salt (divided)
  • 1/4 teaspoon pepper (divided)
  • 1 teaspoon olive oil (divided)
Instructions
  1. Prep your ingredients

    Slice your onions quite thinly.

    Heat up a cooking pan. Cook onions with 1/2 the amount of salt until tender, around 15mn. Add honey after 10mn. Remove from heat and add black pepper.

    While the onions cook, finish prepping your ingredients : mince your chives and cut your goat cheese into slices. Chop up your nuts.

  2. Wrap it !

    Warm your wraps around 30 seconds per side on a heated pan or 30 seconds in the microwave ;  they'll get more pliable. 

    Spread around 2 tbsp goat cheese on each wrap.

    Then add :

    • chives
    • a few goat cheese slices
    • hazelnuts
    • onion
    • ham
    • arugula
    • olive oil
    • pinch of salt
    • pinch of pepper.

    Fold your wrap ! (see video) 

    Et voilà !! You're done !  

    Don't wait too long when heating your wraps ; they'd get crispy !
