Bone-in chicken thighs steamed until impossibly juicy, showered in a garlicky ginger-scallion chili oil and a light, savory sauce made from their own cooking juices. Serve over jasmine rice with cucumber for a simplified take on Hainanese-style chicken.
Set up a large pot with a shallow layer of water and a steaming rack. Place a plate on the rack with a small upturned bowl in the center, then arrange the chicken thighs on top.
Scatter the ginger slices and scallion pieces over the chicken. Cover and steam for about 25 minutes, adjusting upward for thicker thighs or a pot that doesn't seal tightly.
Very important: keep all the juices that collect in the plate underneath — you'll need them for the sauce. Let the chicken rest for 5 minutes off the heat so the last juices finish dripping, then shred once cool enough to handle.
Heat the neutral oil gently in a small saucepan.
Once it's hot enough that a piece of ginger sizzles gently, add the ginger slices, garlic and the white parts of the scallions.
Cook over medium-low heat for about 3 minutes — you're after a soft sizzle, not an aggressive fry. The ginger should turn fragrant without browning.
Add the green parts of the scallions for the final minute, then season with salt. Take off the heat and stir in the gochugaru.
Strain the oil.
Combine 3 tablespoons of the ginger-scallion oil with all the reserved chicken juices, the light soy sauce, sesame oil, and a few drops of Maggi seasoning.
Taste and adjust — you're looking for a very loose, almost broth-like sauce, not a thick glaze.
Serve the shredded chicken over jasmine rice with the cucumber slices, and pour plenty of sauce over everything so the rice can soak it all up.
